Heritage of Bangla Misti:

Bangla Misti is a classic and a magical product. In terms of design, craft, colour, taste and content, it is unique. Bengal has more than hundred varieties of sweets but only thirty to forty varieties are now available. Many varieties have been lost. Some still exist but not in their original form, and some are in danger of becoming extinct. The decline of this great heritage has been for many reasons. Among many causes, the two most compelling reasons are unhygienic production processes, high cost of labour and insufficient use of modern food machinery.

Making Bangla Misti using Modern Food Equipment:

Santiniketan Society for Youth Empowerment has taken up a mission to revive Bangla Misti by use of modern food technology, maintaining production hygiene and by employing digital marketing.

Advantages of using Food Equipment:

Bangla Misti is traditionally made by skilled craftsmen using hands and with traditional utensils. Because of this, there is a perception that Bangla Misti is not always manufactured under hygienic conditions. This has a negative impact on the next-gen customers. The other critical issue is the cost of labour.

Misti making being a labour intensive industry, the cost of labour greatly influences the price to the customers. To meet this challenge of hygienic manufacturing, standardisation and for minimising cost of labour, adoption of automatic and modern food machinery is a must.

The Food Lab at Santiniketan:

To support and help Misti makers, Santiniketan Society for Youth Empowerment has set up a Food Lab in order to train young men and women so that they can operate modern Misti making machinery.

Installed Equipment:

At the Food Lab, a series of equipment like Rossogolla Making Machine, Khoya & Rabri Making Machine, Doi Making Machine has been installed.

What you will learn at the workshop:

This Workshop intends to provide hands-on training on how to operate these equipment to traditional craftsmen and also create a ready pool of smart food technicians.
