Experience the vibrant and diverse culinary traditions of Southern India as Ministry of Kebabs at Novotel Kolkata Hotel & Residences presents “Flavours of India – A Journey Through South India”, a specially curated festival celebrating the region’s rich heritage, distinctive flavours and time-honoured culinary traditions.
Curated by renowned Chef Anthony Da Salva, the festival brings together authentic recipes and traditional cooking techniques inspired by the diverse cuisines of Kerala, Karnataka, Tamil Nadu and Andhra Pradesh. The experience takes guests on a gastronomic journey through the bold flavours of Chettinad and Andhra, the coconut- rich cuisine of Kerala, and the distinctive Mangalorean and Malabar culinary traditions.
The specially curated menu features an array of regional favourites, including Mangalore Paneer Ghee Roast, Mirapakaya Bajji and Vazhai Poo Vada for vegetarian diners. The non-vegetarian selection includes Madurai Mutton Chukka, Andhra Kodi Vepudu and Malabar Chemmeen Ularthiyathu, alongside signature preparations such as Gongura Maamsam Koora, Chicken Chettinad and Thalassery Chicken Biryani.
The experience is further complemented by traditional accompaniments such as Kadamba Sambar, Coconut Chutney and Peanut Chutney, along with South Indian favourites including Malabar Paratha, Idiyappam and Masala Dosa.
Rounding off the culinary journey is a selection of traditional South Indian desserts, including Ada Pradhaman, Elaneer Payasam and Mysore Pak, offering guests an indulgent finale to an authentic journey through the flavours of the South.
Each preparation is thoughtfully crafted with the quintessential flavours of Southern India, featuring coconut, curry leaves, roasted spices and distinctive regional masalas that capture the essence of its diverse culinary traditions.
Adding to the experience, traditional presentation, chef-led storytelling and an evocative South Indian ambience come together with specially curated music to create an immersive dining experience. “Flavours of India – A Journey Through South India” invites guests to discover the rich heritage, authentic flavours and distinctive culinary traditions of the South through a memorable gastronomic journey.
