Surrounded by mist-laden mornings, mango groves, and the soothing murmur of the Kosi River, Taj Corbett Resort & Spa welcomed the festive season with its much-anticipated Cake-Mixing Ceremony, a cherished ritual that marks the beginning of Christmas celebrations across the globe. Set against the idyllic backdrop of Corbett’s winter wilderness, the ceremony unfolded as a vibrant blend of tradition, indulgence, and community spirit.

This year’s preparation was crafted with exceptional care. The culinary team curated 25 varieties of nuts, seeds, fruits, and peels together weighing 76 kilograms which includes almonds, cashews, walnuts, pecans, pistachios, hazelnuts, Brazil nuts, sunflower seeds, flax seeds, sesame seeds, prunes, dry cherries etc, as well as fragrant ginger, orange, and lemon peels. These were layered with 11 warming winter spices such as cinnamon, nutmeg, cloves, allspice, and ginger, each adding depth and aroma to the mix. This generous medley was then soaked in 50 litres of premium spirits, including dark rum, brandy, cognac, and sherry, allowing the flavours to mature into the rich, signature base that will soon transform into the resort’s Christmas delicacies. The aroma rising from the blend notes of citrus, cinnamon, clove, and caramelised fruit filled the air with the unmistakable cheer of the holidays.

Guests gathered on the riverside lawns, where tables were beautifully laid out with bowls of jewel-toned ingredients. Laughter mingled with the clinking of ladles as families, friends, and chefs jointly folded the season’s bounty into the awaiting blend. The morning concluded with an elegant riverside high tea, featuring winter-inspired savouries, handcrafted pastries, and warm beverages that created a tranquil yet festive setting matching perfectly with Corbett’s crisp air and gentle sunshine.
