Ministry of Kebabs presents ‘Punjabi Yaarana’ — a soulful 10-day culinary pop-up honouring the spirit of friendship through the vibrant traditions of Punjab. From 1st to 10th August 2025, the restaurant will transform into a heartfelt celebration of Punjabi heritage and hospitality, thoughtfully curated by the legendary Chef Harjinder Singh, lovingly known across India as Chef Sweety Singh.
A stalwart of traditional Punjabi cuisine, Chef Sweety Singh brings with him over three decades of culinary wisdom, passed down from his father, Sardar Gyani Santokh Singh, who ran a beloved dhaba in Delhi during the 1950s. With no formal training, Sweety Singh entered the kitchen at 19, guided by instinct, family values, and his father’s unshakeable belief in slow, soulful cooking. Even after his father lost his eyesight, the kitchen remained a sacred space where recipes were honoured, not hurried. Renowned as the Master of Spices, Chef Sweety Singh’s philosophy is rooted in purity and purpose, no artificial colours, no shortcuts, no overwhelming cream or nut-based gravies. His food is honest and heartfelt, using only asli ghee, hand-pounded spices, and age-old techniques that let each ingredient speak for itself.
At ‘Punjabi Yaarana’ in Ministry of Kebabs, diners are invited to celebrate the unbreakable bond of lifelong friendship over a soul-stirring journey through the rustic kitchens of Punjab. Curated with heart by Chef Sweety Singh, the menu brings to life timeless Punjabi flavours — from smoky Tandoori Kukad and slow-cooked Dal Amritsari to the earthy richness of Kachhe Ghare Da Saag with Makki di Roti. Relish crowd-favourites like Amritsari Macchi and the festive comfort of Pindi Chole Bhature. The experience ends on a sweet, nostalgic note with Gur ka Halwa and Desi Ghee Pinni — desserts that capture the warmth of home, tradition, and shared memories.
Speaking about the pop-up, Chef Sweety Singh shares, “Authentic Punjabi food isn’t just about flavours—it’s about emotion, memory, and legacy. Every dish I prepare is rooted in my childhood and the values my father instilled in me. I’m honoured to bring this experience to Kolkata and especially glad to present it at Novotel Kolkata, where the spirit of warmth and tradition is truly celebrated. With Punjabi Yarana, I hope guests feel not just full, but fulfilled—with food that speaks from the heart and nourishes the soul.”
Mr. Rajneesh Kumar, General Manager of Novotel Kolkata Hotel & Residences, adds, “We are proud to bring Chef Sweety Singh and his culinary legacy to Kolkata.
