Ministry of Kebabs at Novotel Kolkata Hotel & Residences presents Ilish Ache, Bhuribhoj Hobe, a thoughtfully curated à la carte festival celebrating Bengal’s most iconic monsoon delicacy, Hilsa. Scheduled from 18th to 27th July, this ten-day culinary showcase is a tribute to the deep cultural and emotional connection Bengalis share with ilish, brought to life through timeless recipes, elevated techniques, and soulful storytelling.
Curated by Chef Rana Mukherjee, Executive Sous Chef, the menu features an exquisite array of traditional favourites including Shorshe Ilish, Doi Ilish, Ilish Pulao, KanchalonkaDhonepata Ilish, and Ilish Bhapa Paturi, illish korma, illish Begun Dia. Each preparation pays homage to classic Bengali cooking methods—whether steamed, mustard-marinated, or slow-cooked—evoking the rich flavours and nostalgia of Bengal’s culinary heritage.
Chef Rana Mukherjee shared, “Hilsa is not just a fish — it’s an emotion deeply embedded in the Bengali soul. With Ilish Ache-Bhuribhoj Hobe, our aim was to honour that legacy by crafting a menu that stays rooted in tradition while embracing refined flavours and thoughtful techniques.
