FOOD : RECIPE OF THE WEEK: AVOCADO SALAD WITH CHERRY TOMATO, CILANTRO WITH LEMON HONEY DRESSING

INGREDIENTS :

  • Mint -15 gms
  • Cilantro -10 gms
  • cherry tomato -150 gms
  • Red endive – 20 gms
  • Iceberg lettuce -50 gms
  • Freshly ground black pepper -1 gm
  • Large ripe avocado -250 gms
  • Dijon mustard -10 gms
  • lemon – 1
  • EVOO -20 gms
  • Orange-150 gms

METHOD:

In a mixing bowl, combine the avocados, orange and cherry tomatoes .Make vinaigrette: In a blender, combine the lime juice, honey, mustard, salt, and pepper. Blend on medium speed .Slowly add the oil until emulsified. Pour into a container or jar and mix in the cilantro.Add vinaigrette to salad. Toss gentlySeason generously with salt and pepper. Serve chilled.
