INGREDIENTS :
- Mint -15 gms
- Cilantro -10 gms
- cherry tomato -150 gms
- Red endiveĀ – 20 gms
- Iceberg lettuce -50 gms
- Freshly ground black pepper -1 gm
- Large ripe avocado -250 gms
- Dijon mustard -10 gms
- lemon – 1
- EVOO -20 gms
- Orange-150 gms
METHOD:
In a mixing bowl, combine the avocados, orange and cherry tomatoesĀ .Make vinaigrette: In a blender, combine the lime juice, honey, mustard, salt, and pepper. Blend on medium speed .Slowly add the oil until emulsified. Pour into a container or jar and mix in the cilantro.Add vinaigrette to salad. Toss gently,Ā Season generously with salt and pepper. Serve chilled.
