Plant-powered goodness’ is the order of the day at this sustainability-focused restaurant celebrating the finest local ingredients.

Dusit Thani Maldives is further elevating its renowned culinary  offerings with the introduction of SALA – a new vegan restaurant that offers plant-based,  nutrient-rich dishes crafted with the finest locally sourced ingredients and homegrown produce  from the resort’s own organic gardens.

Created in collaboration with Chef Celia Lam, the co-leader of the Slow Food Community  Bangkok and an instructor at The Food School – Thailand’s first academy of gastronomy with  business incubation services, operating under Dusit Hospitality Education – the restaurant’s  menu promises an exquisite ‘plant-powered’ journey, with highlights such as Greek orzo salad,  Baked spiced pumpkin, and Eggplant steak a la plancha, alongside a diverse range of salads,  soups, and mains expertly designed to tantalise the taste buds.

Situated overlooking the turquoise waters of Baa Atoll in a Thai-style home, the restaurant  embodies Dusit’s unique brand of Thai-inspired gracious hospitality. Its arrival reflects Dusit  International’s wider dedication to sustainability through its Tree of Life programme,  emphasising environmental conservation, health, and wellness. By integrating organic, plant based cuisine into the resort’s culinary offerings, Dusit Thani Maldives continues to lead the way  in promoting sustainability and well-being in the luxury travel sector.

SALA will officially open its doors on 1 November 2024. To celebrate, Chef Celia Lam will  personally fly in to host a series of exclusive masterclasses and interactive workshops, giving  guests a unique opportunity to learn the art of creating extraordinary vegan dishes using fresh,  wholesome ingredients. These workshops will be held daily from 1 – 4 November.

“This new organic restaurant represents our commitment to promoting healthy, sustainable  living while offering an exceptional dining experience,” said Jean-Louis Ripoche, Area  General Manager, Maldives. “We are delighted to welcome Chef Celia Lam, whose passion for  sustainability aligns perfectly with our vision, and we are confident SALA will resonate with  health-conscious travellers seeking a transformative dining experience.”

Situated in the heart of the UNESCO World Biosphere Reserve of Baa Atoll, Dusit Thani  Maldives is a serene haven that blends Thai-inspired luxury with Maldivian culture, offering  guests exclusive experiences such as vibrant marine life, world-class wellness at Devarana  Wellness, fine dining, luxurious villas, and a diverse range of activities amidst the stunning  natural beauty of the Maldives.
